Meal Plan Review & A Late Menu

 Meal Plan in Review...

I think we did a pretty good job sticking to the menu this week. Sometimes I have to be careful not to over prep so we don't get bored and leftovers get eaten within 3-5 days.

Use it Up

  • 3 Small Zucchini
  • 3 Beets
  • 1/2 a bag of spinach leaves
  • 1/4 head of cabbage
  • home canned rhubarb sauce
  • whole chicken
  • lemons - still a few left
  • cherry tomatoes - half gone
  • lettuce
  • sliced deli ham
  • breakfast sausage from the freezer
On the Menu

Breakfast

  • Egg & Sausage Breakfast Tacos - check!
  • Sausage, Peppers, & Egg Casserole - moved to next week
  • I also brought bread to work for toast this week
Lunches
  • Misc leftovers from the weekend - check! This included some chicken, veg, and potato from dinner
  • Pesto Chicken - check! Served with Salad
  • Mac & Cheese - check! Served with various veg and chicken
Dinners
  • Roasted Chicken & Vegetables with Baked Potatoes - Sunday night's dinner, vegetables included roasted cabbage, beets, and sautéed spinach with bacon
  • Pesto Chicken w/ Air Fryer Roasted Green Beans - dinner for two nights
  • Maybe Porkchops? - Beef tips braised in the oven with green beans, rice & biscuits - delicious!
  • We stopped at Cracker Barrell for dinner one night, a gift card covered most the meal

What's on the Menu?

This week's menu is coming a bit late, so I decided to tag it on to what we ate from last week.

Use it Up

  • About 1.5 cups of leftover chicken
  • Leftover Chicken Tenders from Cracker Barrel - they originally gave me the wrong order, which is why I ended up with a lot of leftovers
  • Mushrooms
  • Cooked Breakfast Sausage
  • Hot Sauce - we bought a BIG bottle of Franks when we were making a lot of buffalo chicken dip pre-covid
  • Chicken & Veg scraps from roasting the whole chicken - to be made into stock
  • Frozen Stale Bread
  • Frozen Bell Peppers
  • Orzo Pasta
On the Menu

Breakfast

  • Sausage, Peppers, & Egg Casserole
    • This uses up the stale bread & peppers from the freezer
Lunches
  • Mac & Cheese w/ Chicken from CB and Salad
  • Mushroom & Swiss Chard Orzo - based off this recipe
    • This recipe used swiss chard from the freezer and stock I made in the crockpot
  • Pesto Chicken w/ Green Beans
  • Work Provided Lunch & Snacky Work at Home Lunch
    • Days that I work from home I typically graze on leftovers/ cheese & crackers/ etc
Dinners
  • Mac & Cheese with Salad
    • Ben had the leftover mac & cheese last week, and I wanted some this week!
  • Buffalo Chicken Dip with Salad
  • Surf & Turf Night
    • Fish from the freezer and steak that's on sale at Hannaford
  • Clean out the Fridge Leftovers - 
    • This is often Friday night's standard dinner
