Plan & Prep | January 30th - February 5th

 It's Week 4 of the Freezer Challenge and the list of items left is getting down to the few things that I didn't quite have a plan for, or have lost their appeal (looking at you, sherbet ice cream). This week we had a lot of leftovers to work through, but I was still able to incorporate mostly freezer challenge items to fill in the gaps.

Meal Plan & Prep for the 1st Week of February 2021

Ingredients

From the Freezer Challenge List

  • Ground Chile & Roasted Garlic Sausage
  • Tortilla Scraps
  • Diced Bell Peppers
  • Cooked Diced Chicken
  • French Style Green Beans
From the Fridge, Chest Freezer & Pantry
  • Top Round Sirloin
  • Baby Carrots
  • Cream Cheese
  • Yogurt
  • The Rest of the Cooked Chile Lime Chicken
  • Tortillas
  • Sour Cream
  • Egg Noodles

Meal Prep 

  • Chile & Roasted Garlic Sausage Meatballs w/ Seasoned Vegetable Rice
    • I used this recipe as a guideline, substituting out the breadcrumbs for the tortilla scraps that I shredded in the food processor
  • Steamed Broccoli
  • Apple Sauce Cups
  • Blueberry Oatmeal Bars
  • Double Chocolate Chips Cookies - I rolled 2/3 of the dough into logs for the freezer
  • Berry Coconut Overnight Oats
  • Dice & Freeze Green Onions

  • Lasagna Leftovers w/ Broccoli 
  • "Pickity Bits" (cheese, crackers, nuts, etc) and Misc. Leftovers
Dinners for the Week 
  • Saturday - Lasagna & Salad
  • Sunday - Lasagna & Broccoli
  • Monday - Chicken Breast, Frozen Green Beans & Corn, Knorr Butter Noodles
  • Tuesday - Chicken Quesadillas w/ Raw Carrots & Grapes
  • Wednesday - Instant Pot Beef Tips w/ Egg Noodles & Carrots
  • Thursday - Lasagna Leftovers
  • Friday - Chicken Taquitos
Snacks for the Week
  • Yogurt, Cheerios, Grapes, Gold Fish
  • Also Available: carrots, popcorn, cheese sticks, nuts, pretzels, etc
