Plan & Prep | January 30th - February 5th
It's Week 4 of the Freezer Challenge and the list of items left is getting down to the few things that I didn't quite have a plan for, or have lost their appeal (looking at you, sherbet ice cream). This week we had a lot of leftovers to work through, but I was still able to incorporate mostly freezer challenge items to fill in the gaps.
Meal Plan & Prep for the 1st Week of February 2021

- Ground Chile & Roasted Garlic Sausage
- Tortilla Scraps
- Diced Bell Peppers
- Cooked Diced Chicken
- French Style Green Beans
- Top Round Sirloin
- Baby Carrots
- Cream Cheese
- Yogurt
- The Rest of the Cooked Chile Lime Chicken
- Tortillas
- Sour Cream
- Egg Noodles
Meal Prep
- Chile & Roasted Garlic Sausage Meatballs w/ Seasoned Vegetable Rice
- I used this recipe as a guideline, substituting out the breadcrumbs for the tortilla scraps that I shredded in the food processor
- Steamed Broccoli
- Apple Sauce Cups
- Blueberry Oatmeal Bars
- Double Chocolate Chips Cookies - I rolled 2/3 of the dough into logs for the freezer
- Berry Coconut Overnight Oats
- Dice & Freeze Green Onions

- Thursday - Lasagna Leftovers
- Friday - Chicken Taquitos
