Plan & Prep | January 16th - 22nd; Freezer Challenge Week 2

It's Week 2 of the Freezer Challenge and that list is getting shorter and shorter! I was thinking that the Freezer Challenge may take 5 or more weeks, but it looks like we may only squeeze another week or possibly two out of it.

This week's Plan & Prep focused on working from the list of items in my Freezer Challenge post, along with the fresh produce I picked up this week (which will come out in the next WWS & WWA), plus pantry staples.

This Freezer Challenge has really pushed me to plan out my whole week of main meals, as many of the items are proteins. This has worked out quite well so far, and we've had very little food waste & grocery spend as a result.

Meal Plan & Prep for the 3rd Week of January 2021

    • 1lb. Ground Pork
    • Italian Marinated Chicken Tenders
    • Cooked Pulled Pork

    • Frozen Broccoli Florets
    • Bell Pepper Strips
    • 1tsp. Frozen Ground Ginger

From the Fridge, Chest Freezer & Pantry
    • Milk Purchased on Clearance - the last cup
    • Ground Beef
    • Hamburger Buns - these were not in the best shape, but I was able to salvage two
    • One English Muffin
    • Tortillas
    • Rice
    • Can of Baked Beans
    • 3-ish Ounces of Cream Cheese
    • Fresh Broccoli
    • Fresh Green Beans
    • Curly Leaf Parsley
    • Green Onions

  • Teriyaki Meatballs w/ Rice
  • Creamy Kielbasa Pasta w/ Green Beans

  • Leftover Creamy Kielbasa Pasta (x3) - made originally for lunch on Sunday, recipe coming soon!
  • Teriyaki Meatballs w/ Rice & Broccoli (x4)
  • Leftover Frozen Pizza (x1)
  • BBQ Pulled Pork & Bean Bowls (if needed)
  • "Pickity Bits" (cheese, crackers, nuts, etc) and Misc. Leftovers
Dinners for the Week 
  • Friday - Pizza Rolls & Baked Potato Fries
  • Saturday - Leftovers from the Week Prior
  • Sunday - Frozen Pizza
  • Monday - Italian Marinated Chicken, Baked Potatoes, Green Beans
  • Tuesday - Smashed Burgers w/ Chips
  • Wednesday - Spaghetti w/ Meat Sauce & Green Beans
  • Thursday - Chicken Taquitos, Broccoli, Blue Corn Chips & Salsa

Snacks for the Week
  • Strawberry Yogurt Parfaits, Cheerios, Kiwi, Blueberries

My Dad will join us for dinner on Wednesday night, planning on spaghetti that night.
