Plan & Prep | February 27th - March 5th

This week's plan for food prep is keep it simple and light. I snagged some fresh produce and fruit at a good price last week and wanted to ensure that we used it up before it went bad. This week's dinners are a great example of how we keep meals interesting without cooking something completely new each night. By roasting off a variety of vegetables and meats that compliment each other, we can mix and match to make a "new" meal or roll those leftovers into the next day's lunches. Think of it as the capsule wardrobe approach to meal prep!

I also turned to the freezer this week to fill in the gaps in Ben's lunches since I did not get to doing the majority of meal prep until Monday and Tuesday evening. Knowing I've got something to fall back on helps to make Mondays a little less stressful!

Meal Plan & Prep for the 4th Week of February 2021

  • Fresh Cauliflower

Meal Prep

  • Strawberry & Blueberry Fruit Cups
  • Pulled Pork Chili - Defrosted and Portioned
  • Roasted Cauliflower, Asparagus, and Tomatoes
  • Breakfast Snack Box
  • Baked Chicken for Chicken Taquitos

Breakfasts for the Week
  • Strawberry Overnight Oats
  • Toast w/ Peanutbutter
  • Breakfast Snack Boxes - like an adult "Lunchable"! Mine consisted of deli ham, cheese, wheat thins, grapes, and cucumber
  • Freezer Breakfast Sandwiches if Needed
Lunches for the Week
  • Pulled Pork Chili from the Freezer w/ Cornbread
  • Leftover Ham, Beets, and Broccoli w/ Cornbread
  • Beans & Chorizo w/ Rice & Cheese - the beans and chorizo was a single frozen portion that I stretched added rice and cheese to
  • Leftover Pesto Chicken, Broccoli, and Rice
  • Leftover Chicken Taquitos w/ Blue Corn Chips
  • Single Portion of Winter Stew from the Freezer
  • "Pickity Bits" (cheese, crackers, nuts, etc) and Misc. Leftovers from Dinners


Dinners for the Week 
  • Saturday - Pork Tenderloin, Potatoes, & Broccoli
  • Sunday - Frozen Pizza, Popcorn Chicken, and Chips
  • Monday - Ham, Beets, Broccoli, and Cornbread
  • Tuesday - Chicken w/ Pesto, Roasted Cauliflower, Roasted Asparagus, Roasted Tomatoes, Broccoli, and Rice
  • Wednesday - Chicken Taquitos w/ Blue Corn Chips, Cucumbers, Carrots, and Tomatoes
  • Thursday - Pasta w/ Pesto & Roasted Vegetables, Chicken, and Shrimp
  • Friday - Beef Tacos w/ Queso and Chocolate Cake (requested Birthday meal by my Dad)


Snacks for the Week
  • Blueberries, Strawberries, Grapes
  • Also Available: carrots, popcorn, cheese sticks, nuts, pretzels, etc
