Prep & Plan | February 6th - 12th
It's Week 5 of the Freezer Challenge, and with just a few items left to use, I am pretty confident that this will be the final week. I've really enjoyed the challenge of using up these items that I was either avoiding or uninspired by and look forward to coming up with another creative challenge to share with you.
After the last few weeks of pretty disciplined meal planning, I was feeling pretty uninspired this week. Sunday evening primarily consisted of checking the fridge, putting a few scattered leftovers together into a semi-cohesive lunch, and settling down to knit and watch the Super Bowl.
I did manage to stop into Market Basket Sunday and pick up a few fresh vegetables and the salsa that I needed for chicken taquitos, so I've primarily let those items be the foundation of my meals for the week. For the most part, this week will consist of freshly cooked dinners, and those dinners will be rolled into lunches. This is not necessarily different than most planned weeks, but I typically prep more of the meats & vegetables in advance to cut down actual cooking time the night of.

- Misc Leftovers - when I work from home I often eat my lunch for a late breakfast, and make a snack plate for a light lunch
- Egg & Cheese on a Bagel
- Eggs or Cereal also Available
- Homemade Chinese from the In-Laws, combined w/ some misc leftover veggies and meatballs
- Homemade Stovetop Mac & Cheese w/ Steak Tips & Green Beans - I made this while working from home on Monday
- Turkey Pot Pie Filling w/ Leftover Egg Noodles
- Chicken Taquitos w/ Blue Corn Chips, Cucumbers, & Carrots
- "Pickity Bits" (cheese, crackers, nuts, etc) and Misc. Leftovers
- Saturday - hmmm I don't remember, but I'm pretty sure it was leftovers from last week
- Sunday - Small Homemade Calzones w/ Chips
- Monday - Chicken Taquitos w/ Blue Corn Chips, Cucumbers, & Carrots
- Tuesday - Steak & Salmon w/ Rice & Green Beans
- Wednesday - Creamy Kielbasa Pasta w/ Green Beans
- Thursday - Baked Chicken, Broccoli, Roasted Potatoes
- Friday - Not sure yet... probably leftovers from the week w/ some fill-ins

- Chocolate Chip Pan Cookie - I originally intended to freeze the cookie dough, but it was so dry it would not hold it's shape, so I pressed it into a pan and baked it instead. I served it with a small scoop of coffee ice cream on top, it was delicious!
- Yogurt, Applesauce, Grapes, Cucumber Slices
- Also Available: carrots, popcorn, cheese sticks, nuts, pretzels, etc
