Plan & Prep | July 4th - July 10th

Planning and Prepping your meals for the week is a great time saver and reduces food waste!

On Sunday I prep work lunches for the week and get components for future dinners organized. Wednesday nights are often used for a second mini prep if needed to get us through the rest of the week. 

Some weeks lend themselves to very structures meal plans, others will need a bit more flexibility. Let your schedule and activities drive your meal plan strategy!

This week is off to a slow start in the meal-prep realm after a tiring weekend of canning, yard work, and swimming. Work lunches will mostly consist of dinner leftovers this week. I've been feeling a bit burned out lately on meal prepping - probably due to the warmer weather, so prepping has been progressively less rigorous than in the cooler months.

If you've followed my WWS & WWA, you know we've done a lot of stocking up the past couple weeks, and we are starting to receive some return from our gardening efforts. Our approach to meal planning means that we are always rotating out what's in the freezer and pantry while using sales to restock items we are low on.

Ben and I are both working back in the office now (part time for me), so all lunches and breakfasts are packed from home. 

Breakfasts for the Week
  • Strawberry & Yogurt Cups w/ Cheerios
  • Freezer Breakfast Burritos
  • Granola Bars
  • Breakfast Biscuits w/ Peanut Butter
Lunches for the Week
  • Steak, Spinach, and Baked Potato
  • Enchilada Rice Bowl from Freezer
  • Dinner Leftovers
Lunch Snacks for the Week
  • Watermelon
  • Raw Veggies & Dip
  • Also Available: carrots, popcorn, cheese sticks, nuts, pretzels, etc
Dinners for the Week 
  • Tacos w/ Spinach from Garden and Homemade Queso
  • Garlic Butter Steak Tips w/ Baked Potatoes & Snow Peas from Garden
  • Something w/ Chicken - TBD
  • Lasagna Rollups
  • Stromboli
  • Maybe Seafood something for Ben?
Other
  • Chocolate Chips Cookie Pan Recipe
  • Pesto from Garden Spinach and Basil
Use it Up!
  • 3 Roma Tomatoes
  • Rhubarb, 4-5 cups diced
  • 3 Yellow Peppers
  • Sooo much watermelon that may become watermelon simple syrup
  • Cottage Cheese
  • Ricotta Cheese
From the Freezer & Pantry
  • Taco Shells & Seasoning
  • Chicken Breast & Ground Beef
  • Pizza Sauce
  • Mozzarella Cheese
