Plan & Prep | July 18th - 24th

This week is off to a sweltering start. I kept meal prep simple, staying away from the oven to avoid the heat. Summer is the time of year for stove-top meals!


Simple Sunday Prep

This Sunday we spent the day relaxing at home, catching up on various cleaning tasks and other miscellaneous to-dos. Prep for this week was pretty standard - I made a taco salad for myself and pan roasted veg, turkey meatballs, and rice for Ben. This weekend I also canned our first round of pickles, 7 quarts and 2 pints worth!

Bread & Butter Pickles


To round out Monday's lunches, I sliced up the remaining fresh veg in the fridge, and packaged up a few containers of hummus. Having everything for lunch ready to grab and go makes mornings much smoother!

On Tuesday my Dad will be joining us for dinner, so I will use that night to utilize the oven. Hopefully Tuesday will be cooler than Sunday's 100+ degree temps.

Some weeks lend themselves to very structures meal plans, others like this week focus on using up leftovers. Let your schedule and activities drive your meal plan strategy!

Breakfasts for the Week
  • Freezer Breakfast Burritos
  • Granola Bars
  • Breakfast Biscuits w/ Peanut Butter
  • Egg & Cheese English Muffin Sandwiches (?)
Lunches for the Week
  • Turkey Meatballs, Near East Rice Pilaf, Sautéd Zucchini, Summer Squash, Yellow Bell Pepper
  • Cauliflower Roasted Garlic White Bean Soup w/ Garlic Bread
  • Taco Salad
  • Leftovers
Lunch Snacks for the Week
  • Grapes
  • Hummus w/ crackers and cuke slices
  • Also Available: carrots, popcorn, cheese sticks, nuts, pretzels, etc
Dinners for the Week 
  • Tacos w/ Homemade Queso, Fresh Cukes
  • Baked Bay Scallops, Sautéd Zucchini and Summer Squash, Snow Peas, Fresh Herb Pasta
  • Crispy Breaded Chicken, Fresh Herb Pasta, Green Veggie of Some Sort
  • Ham Steak, Rice, Veggie of Some Sort

Other
  • Protein Balls
Use it Up!
  • Roma Tomatoes
  • Granny Smith Apples
  • Cottage Cheese
From the Freezer, Pantry, & Garden
  • Turkey Meatballs (cooked & frozen)
  • Riced Cauliflower (I over-riced it a bit, but it will work just fine in a blended soup)
  • Chicken Breast
  • Canned White Beans
  • Near East Rice Mix & Pasta
  • Snow Peas, Herbs, Cukes, Zucchini and Summer Squash
Food for Sharing
  • Rice Krispie Pin-Wheels - I didn't get to these last week, so I'll keep them in the wings for this coming weekend.
