Oatmeal Snack Bites

These Oatmeal Snack Bites are simple to make, filling, and easy to customize with your favorite flavors.
From Left to Right: Coconut, Chocolate Chip, Blueberry

Yield: 24 Snack Bites
Prep Time: 10 minutes
Assembly Time: 30 minutes

Ingredients

Dry:
  • 1.5 cups Old Fashion Rolled Oats
  • 2 tbsp. Ground Flax Seed (optional)
  • 1/2 tsp. Cinnamon
  • 1/4 tsp. Ground Nutmeg
  • 1/2 tsp. Baking Powder
  • 1/4 tsp. Salt
Wet:
  • 1 Over-Ripe Banana
  • 1 Egg
  • 1/2 cup Milk (or substitute of choice)
  • 2 tbsp. Maple Syrup
  • 2 tbsp. Canola Oil (or flavorless oil substitute of choice)
  • 1 tsp. Vanilla Extract
Toppings: you will need approximate 1/2 cup of your topping of choice, see bottom of recipe for ideas.

Directions
  1. Pre-heat oven to 350°, grease a 24 cup mini muffin cup baking tray (I used shortening).
  2. Mix together dry ingredient in medium size bowl.
  3. In a separate bowl, mash banana until smooth. Add in remaining wet ingredients and mix until well incorporated (I used a fork).
  4. Combine wet and dry ingredients. Portion evenly between the 24 mini muffin cup wells.
  5. Top each snack bite with approximate 1/2 tsp. topping of choice, pressing it down into the batter lightly.
  6. Bake for 25-30 minutes, until lightly golden brown on top.
  7. Let cool 5 minutes, use a butter knife to gently move each snack bite to ensure they do not stick as they cool.
  8. Store at room temperature in a sealed container for 3 days, in the fridge for up to a week, or in the freezer.
Flavor Combinations

For this recipe, I used three different toppings: shredded sweetened coconut, blueberries, and mini chocolate chips.

More Delicious Topping Ideas:
  • Peanut or Nut Butter
  • Chopped Walnuts, Pecans, or Almonds
  • Fruit Jam
  • Rasins
  • Finely Diced Apple
  • Maple Sugar
  • Slice of Banana
