Plan & Prep for 6/6/20-6/14/20

Planning and Prepping your meals for the week is a great time saver and reduces food waste!

I like to take an hour or two on a Sunday to prep work lunches for the week and get components for dinners organized. I typically will do an additional prep on Wednesday nights, depending on how busy of a week it is. Some weeks lend themselves to very structures meal plans, others, like this week, will need a bit more flexibility.

This week I'll be headed back into the office for work, which means I will be meal prepping lunches for myself for the first time since early March! To throw another wrench into the mix, our septic pump is has quit, meaning that we can let very little water down the drain for the next week until it can be repaired. Additionally, our active house hunt means that we aren't always home until later in the evening to eat. With all that, I've attempted to plan out a low mess, low fuss meal plan. Thank goodness for the freezer and leftovers!


Breakfasts for the Week
  • Freezer Breakfast Burritos
  • Onion Bagels w/ Cream Cheese
  • Granola Bars
Lunches for the Week
  • Tuna Pasta Salad
  • Baked chicken w/ veggies
  • Freezer Meals (a taco rice skillet, and something else I forgot to label)
  • A few other miscellaneous leftovers from the weekend
Lunch Snacks for the Week
  • Strawberries & Blueberries
  • Yogurt
  • Cucumber Slices
  • Also Available: carrots, popcorn, cheese sticks, nuts, pretzels, etc
Dinners for the Week - due to limits on the septic this week, I decided to not make any complete dinners ahead (a lot more dishes) and instead cook off a variety of foods that needed using up that we could mix and match. I will also use a lot of these items for my lunch this week.
  • Baked Chicken Tenders (2 lbs) - half lemon pepper, half garlic and herb
  • Steamed Broccoli
  • Steamed Beet Greens
  • Baked Russet Potatoes
  • Taco Salad w/ lettuce from the garden
  • A one-pot dish, possibly spaghetti
