Ham & Swiss Freezer Breakfast Burritos

Having a stash of breakfast burritos in the freezer makes mornings a breeze - they are protein packed, and portable!

Yield: 12 burritos
Prep Time: 20 minutes
Assembly Time: 20 minutes

Ingredients
  • 6 large eggs
  • 1/3c. milk
  • 1lb. deli ham
  • 6 slices of Swiss cheese, cut in half
  • 1 large bell pepper
  • 1 medium onion
  • 1 tbsp minced garlic (about 3 cloves)
  • 12 flour tortillas
  • Butter/oil for sauteing
  • Salt & Pepper
Directions
  1. Dice the bell pepper and onion, saute in a small amount of butter until softened. Add minced garlic and cook another 2 minutes. Season w/ salt & pepper.
  2. Slice the ham into 1/2 inch pieces. Saute in small amount of butter until lightly browned.
  3. Whisk eggs and milk, scramble, season w/ salt & pepper.
  4. Let all ingredients cool to room temp before assembly.
  5. In each tortilla, add a half slice of cheese, spoonful of peppers & onion, eggs, and ham.
  6. Roll tortilla tightly, tucking in edges as you go. Place seam-side down in a saute pan set on medium. Once lightly browned, flip over and brown the other side. Allow to cool.
  7. Wrap each tortilla in plastic wrap, or freeze spaced apart for 2-3 hours before packing in a freezer bag.
  8. To reheat, remove from plastic wrap and microwave in 30 increments until hot, about 2-3 minutes.
Flavor Combinations

When making freezer burritos, you want to make sure not to over stuff them, and also to keep your ingredients relatively dry. Use cooked ingredients to keep them from getting soggy.

Remember you don't have to stick to just breakfast combos. Leave out the egg for great any-time burritos!

Here is some other flavor inspiration, or make your own combo using the basics below!
  • Bacon, Egg, & Cheese - sharp cheddar is best!
  • Refried beans, eggs, cheese, & salsa/hot sauce
  • Crumbled breakfast sausage, eggs, & cheese
  • Pepperoni, crumbled Italian sausage, peppers, onions, pizza sauce, & mozzarella cheese
  • Sauted mushrooms, onions, peppers, spinach, garlic, sharp cheddar, & white beans

Here are the basic principles I follow when putting together a freezer burritos:
  • Protein: bacon, diced chicken, ham, ground sausage, egg, beans, refried beans, etc - just make sure it's cooked first!
  • Cheese (optional): cheddar, Swiss, mozzarella, etc - any firm cheese will do
  • Flavor: salsa, onions, peppers, mushrooms, hot sauce, spinach, etc - just make sure they are cooked first
  • Layer the ingredients, or mix together, your choice. If using a "wet" ingredients, such as salsa or hot sauce, don't put it on the bottom where it will soak into the tortilla.
